For the sausage:
- 2 lb (900 g) Hungarian-style smoked sausage or kielbasa
- 2 tablespoons vegetable oil
- 2 tablespoons butter
- 3 cloves garlic, finely minced
- 1 small onion, thinly sliced
- ½ teaspoon sweet Hungarian paprika
- ¼ teaspoon smoked paprika
- ½ teaspoon caraway seeds
- ½ teaspoon freshly ground black pepper
For the honey glaze:
- ⅓ cup honey
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- ½ cup chicken or vegetable broth
- 1 tablespoon butter
- Pinch of salt
For serving:
- Fresh parsley, chopped
- Extra paprika
- Crusty bread
- Roasted potatoes or mashed potatoes
- Pickles or sauerkraut
👩🍳 Instructions
1. Prepare the sausage
Cut the sausage into large pieces or leave it whole if you want a presentation similar to the photograph. If using fresh sausage rather than fully cooked smoked sausage, make sure it is cooked thoroughly before serving.
2. Brown the sausage
Heat the vegetable oil in a large heavy skillet or Dutch oven over medium heat.
Add the sausage and brown on all sides for about 5–7 minutes. Remove the sausage and set aside.
3. Cook the aromatics
Reduce the heat to medium-low. Add the butter and sliced onion.
Cook for 4–5 minutes, until the onion becomes soft and lightly golden.
Add the minced garlic, sweet paprika, smoked paprika, caraway seeds, and black pepper. Stir for about 30 seconds.
Tip: Don’t let the paprika burn, as it can become bitter.
