Hungarian Magic Custard Cake (Varázs Sütemény)

This traditional Hungarian-style custard cake is famous for its silky vanilla filling and delicate, lightly crisp pastry. Dusted generously with powdered sugar, it’s a comforting dessert that’s perfect with coffee or tea.

Ingredients

For the Pastry

  • 2 sheets puff pastry (or homemade pastry)
  • 1 egg (for egg wash)

For the Custard Filling

  • 1 liter whole milk
  • 200 ml heavy cream
  • 5 large eggs
  • 180 g granulated sugar
  • 100 g cornstarch
  • 2 tbsp all-purpose flour
  • 2 tsp vanilla extract
  • 1 tsp vanilla bean paste (optional)
  • 60 g unsalted butter
  • Pinch of salt
  • Zest of 1 lemon (optional)

For Topping

  • Powdered sugar, for dusting

Instructions

Step 1: Prepare the Custard

  1. Heat the milk and cream together until steaming but not boiling.
  2. In a large bowl, whisk together eggs, sugar, cornstarch, flour, salt, and vanilla until smooth.
  3. Slowly pour the warm milk into the egg mixture while whisking constantly.
  4. Return everything to the saucepan.
  5. Cook over medium heat, stirring continuously, until very thick.
  6. Remove from heat and stir in the butter and lemon zest.
  7. Cover with plastic wrap touching the surface and let cool for 20–30 minutes.

Step 2: Prepare the Pan

  1. Preheat the oven to 180°C (350°F).
  2. Grease a 9×13-inch (23×33 cm) baking pan.
  3. Line the bottom with one sheet of puff pastry.
  4. Prick the pastry several times with a fork.

Step 3: Assemble

  1. Spread the cooled custard evenly over the pastry.
  2. Place the second pastry sheet on top.
  3. Brush with beaten egg.
  4. Score the top lightly into squares (do not cut through).

Step 4: Bake

Bake for 40–50 minutes, or until the pastry is golden brown and crisp.

Step 5: Cool

Allow the cake to cool completely, then refrigerate for at least 3 hours (overnight is even better).

Step 6: Serve

Dust generously with powdered sugar and cut along the scored lines into squares.


Tips

  • The cake slices much more cleanly when fully chilled.
  • Use real vanilla for the richest flavor.
  • Serve with coffee, espresso, or hot tea.
  • Store refrigerated for up to 4 days.
